I would venture that’s an edible saffron milky cap BUT DON’T TAKE MY WORD FOR IT! The milky cap family is very confusing and hard to differentiate between edible and toxic. At the worst, you’ll get an upset stomach from mistaking one, but…. Also, it should exude a yellowing latex from cut gills.
